Tiger Eye is a beautiful orange heirloom dry bean with dark maroon swirling stripes resembling a tiger’s eye. It originated from either Chili or Argentina and has a wonderfully rich flavor and smooth texture. It has a very tender skin that almost disappears when cooked.
It is great for chili or refried beans.

These beans make a creamy base for a soup and do well with some spices like cumin or chili. I might add a browned pork loin chop to the cooking beans that I will cube or shred after it is cooked and the beans have cooked down. Elegant Beans is really a wonderful company. I love the variety of beans they offer and how quickly they send out their orders. So thankful to have found them online.

Awesome chili with tiger eye and ground pork. This is my go to bean for chili and beans and linguisa. Beans are tender and smooth.

Everyone loves tigers and it can make a fun story for kids (plant a tiger or it will make a tiger come - via stuffed animal) that will help them want to gobble down this healthy and lovely bean

I grow these in my garden but my crop this year is a tad light, like only one pound? That would never get me through the winter so I'm buying another pound here.

I first ran across this heirloom bean at a local farmers market a few years ago, and immediately fell in love with them. After that farm stopped growing them, I was rescued by Elegant Beans, and my reserves were restored. I've used them exclusively for refried beans when I want to educate and make an impression.
