Tiger Eye is a beautiful orange heirloom dry bean with dark maroon swirling stripes resembling a tiger’s eye. It originated from either Chili or Argentina and has a wonderfully rich flavor and smooth texture. It has a very tender skin that almost disappears when cooked.
It is great for chili or refried beans.

I first ran across this heirloom bean at a local farmers market a few years ago, and immediately fell in love with them. After that farm stopped growing them, I was rescued by Elegant Beans, and my reserves were restored. I've used them exclusively for refried beans when I want to educate and make an impression.
