The Snowcap bean is one of the most beautiful of all beans with its tan color and a snowcap of white along the side and random spots of burgundy speckling overall. It is an oddball and thought to have been found in the crop of some other bean. It retains its markings after cooking and is excellent for soups.
It has a creamy texture making it ideal for chowder such as “Snow Cap Chowder.”

This bean is what brought me to Elegant Beans. I had used it for years as the basis for a chowder recipe I made. Then the place I bought them stopped carrying all the heirloom beans. The beans are so creamy and delicious. Sometimes I use my immersion blender to smooth out the soup, other times I leave the beans whole. They make delicious soups. The best ever.
