Runner Cannellini is an heirloom bean that was originally cultivated in South America, brought up to Italy in the sixteenth century and then made its way to California in the late 1800’s. It is associated with and extremely popular in central Italy, Greece and France. It is larger than the traditional Cannellini bean and is preferred by chefs for its outstanding full-bodied flavor. Its texture is potato-like, smooth and starchy.
They are perfect in Italian dishes like minestrone soup or a pureed soup as well as Italian-style baked beans.
An Excellent White Bean

This is a great all around white bean. Excellent flavor and texture. Soaked them first and cooked in my Instant Pot with onions, garlic and a bay leaf. First meal, I served them simply with salt, pepper and a drizzle of high-quality local unfiltered extra virgin olive oil (Bariani). Second meal, i made a sauce of carmelized onions, tomatoes, garlic, thyme, parsley and cashew cream, and served that over the hot beans. Remainder and the broth went into a pot of minestrone. We will definitely get more of this bean.

I ordered 5 kinds of beans a week or two ago. These are the first I have used to make a white bean soup---just excellent. Looking forward to trying the other kinds. Thank-you for growing these heirlooms.

After reading the tips on prepping the beans. I proceeded to put together my Adirondack Style Baked Pork & Beans. WOW, I'll never use any other beans again.
