Lina Cisco’s Bird Egg bean is a family heirloom brought to Missouri by covered wagon in the 1880’s by Lina’s grandmother. Lina Sisco was one of the six original members of the Seed Savers Exchange which was founded in 1975. This heirloom bean is unbelievably aromatic and has a creamy, almost potato-like texture.
It is delicious when boiled, seasoned and topped with cornbread as it is roasted or in a chilled avocado cucumber salad or simply as a bean spread.
You gotta try these beans!

I couldn't be happier with these. Delicious, smooth textured and easy to cook. We grew some for the first time this year and we ate them, all of them, gone in a week. So we had to order some more. What great flavor and texture. These are better than the more common types, and I love those too! Just try them, you won't regret it.
