The Creamy White-Eye Pea is an exclusive Non-GMO bean variety that is a crossover developed from the black-eye pea. The first black-eye pea bean was domesticated in West Africa. It was introduced into the Southern United States as early as the 17th Century in Virginia. The Creamy White-Eye Pea is a mild-flavored bean and since it absorbs other flavors during cooking is delicious seasoned with Thyme, Savory or Rosemary. It is a creamy bean that can be used in baked bean dishes, most often used in ham soups and vegetarian stews. It can be pureed and makes a great accompaniment to a meal you might otherwise serve with potatoes or rice.

Made the White Bean and Black Olive soup from the Moosewood Cookbook with these beans. Perfect! The creamy texture and taste of the beans complimented the other ingredients. Highly recommend.
