The Rice bean dates back to the 1860’s in Germany. The beans look like a plump grain of rice and are related to the kidney bean. They are ¼ inch long and pill shaped. Their uniform ivory white color and unique shape make it hard to believe they are really beans. Rice beans are quick cooking, tender and slightly sweet. There is no soaking required and they can be ready in 30 minutes. Rice beans can be added to soups, casseroles, salads and side dishes. They have a mild flavor and firm texture.
